Dam Aloo / Dum Alu - Navratri Special
Now a days I avoid potatoes. Low carb diet. Yes. I have to get six pack abs. Period.
Who cares???
How do I cook “Dam Aloo / Dum Alu” without using onion in gravy?
Stuff required: 3-4 Potatoes, egg sized, Spices{cloves - laung, cardamom - ilaichi, cinnamon dal-chini, cummin seeds -zeera / jeera, black pepper - kali mirch, turmeric powder - haldi, bay leaves -tej patta and so on}, yogurt or dahi, green chillies - hari mirch, tomatoes and oil and… thats it
heat the oil
fry, shallow fry, potatoes till they turn golden brown, once I cut potatoes in cubes and then fried and used them, not good
take potatoes out, someway, fork them, keep aside and use the remaining oil for cooking
add cumin seeds and bay leaves in oil, hot oil, when cumin seeds start popping out, spluttering, add cloves, cinnamon and other spices which are not grounded
lower the heat, somehow, and add finely grounded spices like turmeric, red chilli etc
add finely chopped green chillies
add finely chopped tomatoes, kool, we are making gravy
fry for 3-5 minutes depending on the heat
take potatoes, fork if still not forked, and add to the gravy
cook for 5 minutes, add water, not too much though, if required to cook potatoes
beat the yogurt and prepare a fine thick liquid, i love fresh yogurt, add to the cooked potatoes, cook on slow heat for 5minutes, heat is a factor here
remove from heat, sprinkle grama masala, granish with coriander leaves, cover the lid for 2 minutes
eat the stuff with rice or chapatis
